Frozen foods have more vitamins and nutrients than fresh. That is true for as much as 70 percent of fruits and vegetables, showed the results of research conducted at the British Leatherhead Institute and the University of Chester, writes the Daily Mail.

Contrary to previous claims that the best choice of these beneficial substances is fresh fruits and vegetables, these studies have proven that by freezing fresh fruits contain more antioxidants, vitamin Ce and minerals.

This is especially true for broccoli. When this vegetable is frozen, it contains more vitamin Ce and lutein, and even four times more beta-carotene than fresh pieces. Or, for example, in frozen carrots, the amount of lutein triples, there is twice as much beta-carotene, and there is more polyphenols than in fresh orange roots.

 

 

Spinach is also better to eat, British experts claim, after freezing, because then it has four times more nutrients, fiber, folic acid, iron and calcium. There are, of course, exceptions. These include lemon, cauliflower and corn. It is better to eat them fresh.

Scientists have found that fresh fruits can stand for months in supermarkets sprayed with various chemicals, in order to maintain a good appearance.

 

 

“For several days now, storage has adversely affected the nutritional value of foods,” said Professor Graham Bonwick, one of the study’s authors.

Of course, fruits and vegetables are always best eaten right after picking, but for city dwellers this is generally not possible.
